A Night For Sight
I was fortunate enough to have been invited to the 60th Anniversary Gala for The Schepens Eye Research Institute this past week.  Yes you heard me, eye research.  It does not sound so glamorous, even a few of my friends raised an eyebrow.  Eyes, vision... it is one of those things you do not think about until you have a problem.  I used to think I'll worry about my vision later in life when it starts to go, haha.  To me I thought this is something that only older people have to worry about, but not so much!  
I am in awe over the new research and advancements that are being made in this field. The Schepens Eye Research Institute was named after the famous Dr Charles Schepens who was a pioneer in retina and eye research. Here is the link to the website http://www.schepens.harvard.edu/
The guest of honor for the event was Monique Lhuillier and we were able to see a fashion show at The Breakers of her latest fashions. I also was able to meet her (and yes I kept my cool & did not cheese out)WOW! She really is amazing and just as beautiful as her clothes! And I admit I was a bit girly giggly that we were both in gold sequin dresses, apparantly I got the memo, heehee. Even though I was looking forward to the fashion show, I was pleasantly surprised at how much I learned that night and how my mind has changed to maybe start thinking about vision in a different way or earlier. Even though I don't have any eye problems now, I do think it's important for myself and EVERYONE to wear polarized sunglasses (especially in this strong Florida sun) as a preventative measure. Sunglass Hut here I come!
I guess eyesight is glamorous after all!

At one of the parties though I was speaking to a friend and she told me that her son lost his eyesight in 1 eye while in college after bunjee jumping.  The force from the bunjee jumping tore his retina in his eye and he permanently lost his vision!!!!  Can you imagine being in college, carefree then the next having lost your vision.  I also have a dear friend that had to wear vision correcting glasses as a 5 years old to correct his vision and to keep from having to have surgery.  The strength of the lenses in the glasses had to retrain the eye muscles so they would keep the eyes in the right location, amazing technology and that was almost 30 years ago!!!  One girl my age told me that because her vision was so bad, that when she had her lasik surgery done she even saw color better and brighter.  I was clearly put in my place by speaking to different people at this party.

To Dairy or Not to Dairy?
The big debate!!!!  I am a huge advocate for The Biggest Loser TV Show.  I think it is amazing how the show helps people change their own lives.  It is a lifelong decision to be healthy and take care of yourself.  Numerous people want a quick fix and unfortunately those are the people that unless they make lifelong decisions on habits they will continue a yo-yo weight problem.  We all know these people that for the last 10 years have been on a diet and never really changed too much or too long with their weight.  With that in mind, The Biggest Loser, really does a fabulous job with educating people to how they can take control & make a change in their own lives.  It truly is an inspirational show and I will admit that I cry at least half the time I watch the show.  
With my love of the show said, as I was watching the Thanksgiving special, there was a dietician making healthy meals for thanksgiving dinner. One of these dishes was a low-cal pumpkin pie. The dietician said use coconut milk instead of regular milk because it makes the dish non-dairy. I'm not sure why there is such negativity with anything "Dairy" these days. Obviously if someone is eating ice cream and drinking heavy cream every day, yes it is bad, but that does not mean ALL dairy is bad. So since I love Thai & Ethnic food and love cooking, I have some Coconut Milk in the pantry, which is actually "lite" coconut milk. After watching this show I felt the need to compare the Lite Coconut Milk with the Skim Milk in the fridge. My results...
As much as things sound so much better in theory being "non-diary" I suggest just read the labels. It takes a little more time & effort to read labels & compare but in the end it pays off. Don't be afraid of dairy just because you think it is more fattening, it might surprise you! If you are lactose intolerant then choose the Lactaid Milk like I use. Dairy is full of protein and calcium. Some of the low-cal, low-fat dairy dishes I like are cottage cheese, yogurt, cheese, milk, greek yogurt, frozen yogurt, quiche and smoothies (keep in mind I always buy fat free or low fat).

Wow, what can I say?!  After threatening for a year or so and a lot of pushing from numerous friends, I guess I have officially started this thing.  I am not the most technologically advanced person in the world so the fact that I even registered this all on my own AND with a background is nothing short of a miracle:)  It has been an amazing thanksgiving weekend and I am so thankful to have my amazing family, friends and patients.  I am hoping that this blog can help people get healthy, stay healthy and be a place for people to visit for health/nutrition tips.  I truly practice what I preach which anyone who knows me will attest to and I hope that I can inspire other people to do the same.
